Cochinito Taqueria - Hayden

We have been to the Spokane location but the Hayden location was even better! The service was excellent! Everyone was so friendly and continuously checking in and truly cared about our experience. The food here is great (and Hayden has some specific menu items) the quality of the ingredients stands out and the meat is the true star. From the duck confit wings, pork belly taco, carnitas, birria, all of the protein has exceptional flavor and is cooked to perfection! This isn’t standard Mexican cuisine, it’s elevated and chef standard. Clean, fresh, bright, and even some combinations and ingredients that surprised us. If you love bold flavors with fresh quality ingredients this is the place!

Tried 4 different meats to get a feel for the place. The lamb by far was my favorite with a sweet savory touch. Bought carne asade, lamb, pork, and birria. All the tacos were great. The carne asade was a bit untraditional and softer but still had a great flavor. Overall it was a great place to get some creative and flavorful tacos!

Delicious food, friendly service, quick, clean, and fun music! Definitely check out the unique brunch menu (with fresh agua frescas and brunch cocktails). They make fresh tortillas and their own chips. Portions are well-sized for the plates (plan to order multiple tacos if you go that route) and prices are lower than I would expect given the excellent quality of the food. This place is incredible! I got the pescado tacos with pinto beans and rice, and my work mate got a pork belly taco and the pescado tacos with black beans and rice. Every detail of this food is so well thought out, and they put so much attention into their presentation as well. The fresca drinks at the counter are a must too, I’ve never had one that wasn’t delicious! Front of house and the kitchen seem like they’re always on top of their game. Super consistently beautiful food that these folks clearly put their heart into. I wish all restaurant food was this good!

Awesome Birria and Carnitas! The real deal - with hand made corn tortillas! The consommé was also on point! If you’re ever in Hayden you need to stop in and get a real taste of Mexico!
