Rosa Cantina

Rosa Cantina is a must to check out! I’ve tried several dishes and all have been amazing. I recently brought friends with to introduce them and the loved it as well. We had a ceviche appetizer which was amazing as well as the guacamole and salsas. I had the Camerones à la Diablo which is a spicy shrimp dish which is one of my gotos and the have the best one I’ve ever had to date! Super flavorful and the spicy kick wasn’t so much that it overpowered the rest of the flavors. The staff are super friendly as well. Definitely give them a try!

Best Mexican food in Longmont as far as I am concerned...and we have been to several low-end and high-end spots. We hit this joint for lunch and started with Queso Fundido...this was much more refined and complex than most places...excellent. Our daughter had the chicken enchiladas...juicy and flavorful meat...and the beans and rice were super flavorful. My wife had the cauliflower pastor tacos...just delicious. I had a trio of street tacos...al pastor, chicirrones, carnitas...all three were killer with the al pastor being the best. Cool digs. Great and friendly service. We are DEFINITELY going back! (Just went back on 2/14/26...STILL THE BEST!)

The image I shared are of the Cantina Nachos regular size (not large), and they were giant! The food has been delicious. The presentation is very creative and done with care. Prices are quite low when you see the big portions. The staff is helpful, friendly, and attentive. The atmosphere is very chill, with music at a nice volume and TV's that aren't distracting. Overall, a really great place!

This is the first place that comes to mind when I think of Mexican cuisine! The food is consistently delicious, and the Carne Asada is definitely my favorite. The staff is always friendly and welcoming. A special thanks to our server Alex for providing such great service. Highly recommended if you’re looking for authentic flavors and a positive vibe!

A vibrant spot that my in laws took us to as we were really craving Mexican food being away from the States for so long. This place really hit the spot, everything was so delicious, the margaritas, guacamole, salsas and all of our dishes. A lovely, bright and colorful eatery with cheerful and very welcoming staff. We came early because they are popular, and even early it was already busy. Would definitely go again and recommend!
