As a 600 lb slob who only weighs 170 lb, and formerly lived in Charleston and Oklahoma and loves all the comfort food, this was absolutely spot-on. The brisket was delicious, tender and the sausage was unique with it being sauteed and caramelizing the barbecue sauce. Speaking of barbecue sauce, the real winner here was whatever recipe they have came up with. It's not typical sweet Kansas style barbecue sauce but rather a tangy sauce that was spot on. I took a dabble from everyone's plates and there wasn't a single thing that wasn't delicious, you really can't go wrong ordering anything on the menu. Silo’s in Bossier City, LA is a new place - 3 months as of January 2026. Family owned business. Pork ribs are something special. Among the best I’ve ever had. Brisket is thick cut and has a good smokey flavor. Fries are fresh cut. Overall quality quite good. Very friendly service. Seems like the family members all do their part. Highly recommended.

So let me preface this by saying that their menu does say bbq is a available till sold out. They basically have burgers, apps, bbq,fish, and dessert. The burger was way over seasoned, fries were good. The rib I tried was amazing but were out of all other bbq. Said I would come in 4pm the next day and was promised they would have some brisket. Came in at 4 but we're sold out of everything but burgers and wings. No bbq, no dessert, no ranch! Also took 10 minutes to get my drink despite being the 3rd person in the restaurant when I ordered. Maybe the bbq is good but they can't seem to keep anything in stock which may be a good thing for the business but unfortunately everyone that came in after 4pm was told the same thing. Stopped in last Friday at noon, TWO other people were there. We stood around for close to 5 minutes before an employee from the kitchen came out just to tell us that the brisket wasn’t ready, the ribs weren’t ready and a litany of others items. She shared her frustration about how no one wants to come to work. Very disappointing. Can’t rate the food because we simply left. Service terrible. Atmosphere graveyard dead.

I hope these people get their issues worked out and learn how to run a restaurant before they end up closing down, but I don’t really see that happening. The plodding pace of service is the opposite you’d expect for a restaurant where most of the food is already cooked. Most of what we ordered was left on the plate, because none of it was very good. The server knew absolutely nothing about the menu, how to work her handheld ordering device, or even steps of service. The only music in the place was a radio station being blasted from the kitchen, commercials and all. Of the many tvs in the building, just one was turned on, and played only the Roku screensaver. The decor was clearly left from the Mexican restaurant that occupied the space before bbq, with a few dollar store decorations hapha
